This one-skillet recipe is packed with flavor and is so easy to prepare. The pairing of fresh rosemary and lemon is the centerpiece of this dish, while the addition of sautéed shallots adds a subtle depth to the flavors. When paired with frozen broccoli, you have the makings of a satisfying, low-carb meal that will soon become a new family favorite.

Ingredients
 2 tbsp unsalted butter
 6 boneless chicken thighs, skin removed
 Salt and black pepper, to taste
 1 tbsp unsalted butter
 2 shallots, sliced thin
 1 cup low sodium-chicken broth
 1 ½ tbsp fresh rosemary leaves, finely chopped (or 1 tablespoon dry crushed rosemary)
 1 head of broccoli, chopped (or 16-oz. bag frozen broccoli)
 1 lemon, sliced thin and cut into small wedges

Heat a large skillet to medium-high heat. Melt 2 tablespoons of butter and swirl to coat the bottom of the pan.

Season each side of the chicken thighs with salt and black pepper. Add seasoned chicken to hot skillet. Cook until chicken is golden brown, approximately 4 to 5 minutes per side, no longer sticks to the bottom of the pan. Transfer the chicken to a plate. Cover and keep the chicken warm.

Reduce the heat to medium. Add the shallots and 1 tablespoon butter to the skillet. Stirring occasionally, sauté the shallots 4 to 5 minutes until soft and golden brown.

Bring the heat back up to medium-high. Add the chicken stock to the pan then bring it to a boil. Use a spatula or wooden spoon to scrape up the brown bits from the bottom of the pan. Add the chopped rosemary leaves and continue cooking until the liquid is reduced by about half, approximately 4 to 5 minutes, stirring occasionally.

Return the chicken with its juices to the skillet. Add the frozen broccoli and lemon. Cover and Reduce the heat to medium-low. Cover the pan. Simmer the chicken and broccoli for 10 to 12 minutes or until the broccoli is crisp and the chicken is cooked through (an internal temperature of 165°F).

Remove the pan from the heat. Serve immediately. Drizzle a spoonful of pan sauce over each chicken thigh. Garnish with additional lemon wedges.
