I’m Filipino so I was excited to find this Filipino BBQ Skewers recipe by Gina Homolka! It brings back memories of family cookouts. And I love that you can make it on the grill. I think everything should be cooked on the grill during the summer months. For me it means:

  • Less cleanup (no slaving over a hot stove or oven, oh yeah!)
  • Quicker meals (it sure seems like it to me) and
  • Less effort (because my husband does most of the grilling – woohoo!)

This recipe calls for pork, but you can use chicken or beef as well.

My favorite summertime drink is margaritas, so I had to include one in my list of 10 Healthy and Easy 4th of July Recipes. I found the perfect one: a Blue Margaritas recipe by Amanda of Fake Ginger. To make a skinny version you can swap out the simple syrup for a teaspon of agave nectar.

To add a touch of red for the July 4th theme, I would slice a strawberry or pitless cherry halfway and place it on the glass rim. And to finish off the look for these Blue Margaritas, you can use these red, white and blue 4th of July Straws.
