Cinco de Mayo is right around the corner! And that means food, drinks and celebration. This year why not plan on including some healthy Cinco de Mayo dishes (summer & swimsuits will be here soon — eek!). With this in mind I’ve put together a roundup of healthy, yet super yummy recipes from appetizer to main dish and side to drinks.
Healthy food doesn’t have to be bland food. Use whole food spices to add flavor and kick to your dishes for this year’s Cinco de Mayo festivities.
First off we’ll start with the appetizer. Here’s a healthy and Whole 30 compliant guacamole recipe from Margaret of Young and Rungry. She uses fresh herbs and spices to make this citrusy, salty, and chunky dip. Check out her recipe for the Best Dang Guacamole.

Here’s a recipe you can set and forget. This one comes from Gina of Skinnytaste. I love recipes like this that allow me time to get everything else ready. Let’s face it, getting dinner, let alone a whole Cinco de Mayo fiesta, together can be an undertaking, especially when you’re running from one thing to another. With this dish, you can do the prep work the night before then pop it into your Instant Pot when you’re ready. When it’s done, the Instant Pot will automatically go into warming mode to keep your pork carnitas nice and hot, not cold and dried out. All that’s left is to shred it and serve.
