Quick and Easy Instant Pot Recipes You Must Try

If you’re like a lot of people, you’re busy and don’t have time for endless amounts of time standing over the stove waiting for your food to cook. These two recipes for making cauliflower fried rice and ground beef in the Instant Pot cut back cooking time and clean up significantly. If you’re meal prepping for the week, double the ingredients and add 2 minutes cooking time. This will give you have plenty to portion out across several meals.

Before we go on, I need to tell you how much I love my Instant Pot – literally love it. And I know you will, too. I use it mostly for it’s electric pressure cooker, slow cooker and saute functions, but there’s more you can do with it. Feel free to comment below with any questions about the Instant Pot.

Back to the recipes. I use pre-riced cauliflower. They are readily available at most supermarkets and are comparable in price to whole heads of cauliflower, minus the effort. Let’s face it, ricing your own cauliflower is time consuming and messy. And like I said, you’re a busy person so let’s make that part of meal prep easier.

Cauliflower Fried Rice

Ingredients

  • 2 bags riced cauliflower
  • 1 tbsp sesame oil
  • 2 large eggs, scrambled
  • pinch of salt
  • cooking spray (canola or coconut oil)
  • 1/2 medium onion, diced
  • 1/2 cup frozen pea and carrots
  • 2 cloves garlic, minced (or 2 tbsp garlic sauce)
  • 5 scallions, diced, white and green separated
  • 3 tbsp soy sauce (or coconut aminos)

Directions

  1. Set Instant Pot to saute and spray with cooking spray.
  2. Once the display shows Hot, add the egg and cook, turning a few times until set. Set aside.
  3. Add the sesame oil and saute onions, scallion whites, peas and carrots and garlic until soft, about 3 to 4 minutes.
  4. Add the riced cauliflower and soy sauce. Mix, cover, and set Instant Pot to Manual for 10 minutes.
  5. When done, let the pressure release naturally or if using the valve release, increase cook time to 14 minutes.
  6. Remove cover and set Instant Pot to saute. Add cooked eggs and toss to mix. Toss a few more times for 1 minute.
  7. Mix in scallion greens and serve.

Cooked Ground Beef

Ingredients

  • 2 lbs ground beef
  • 1/2 medium onion, diced
  • cooking spray (canola or coconut oil)
  • 1 tsp salt
  • 1 tsp pepper

Directions

  1. Set Instant Pot to saute and spray with cooking spray.
  2. Once the display shows Hot, add the onions and saute until soft, about 2 minutes.
  3. Add the ground beef, salt and pepper. Mix, cover, and set Instant Pot to Manual for 15 minutes.
  4. When done, let pressure release naturally or if using the valve release, increase cook time to 18 minutes.
  5. Remove cover and set Instant Pot to saute. Mix to break up ground beef and brown further for 2 minutes.

For variation, change the spices. Use taco spice mix or ranch dressing. Optionally substitute ground chicken or turkey.

Instapot.. the new rave. everyone is talking about them and i want one… I am a cooker and with the little gadgets gizmos and small appliances you can make average dinners AMAZING.

That cauliflower rice look so good I am going to pick up the ingredients tonight and make it stove top with a few improvisions! Thanks so much for the recipe!

I make big batches, divide them up and freeze them. If I’m having tacos I’ll take it some out and let it thaw during the day. Or you can make a batch already seasoned with taco spices.

We got a stovetop pressure cooker as a wedding gift. Never used it. Growing up my mom always made meals with her pressure cooker. But I was nervous to use ours. The Instant Pot is so easy to use and safer than the stovetop version.

Those Instapots sure all all the rage these last couple years. I keep going back and forth on whether to try pressure cooking or not. I really don’t need another appliance in my kitchen!

If you’re typically short on time, you should get it. The IP and Air Fryer are what I turn to when I didn’t have a meal planned out or don’t have much time to make something.
